Direct sow parsnip seeds outdoors from April to mid-June to ensure high-quality roots while minimising the risk of canker disease. It is important to avoid sowing in cold or wet soils. Parsnips thrive in sunny locations with well-prepared, stone-free soil that has been deeply cultivated and enriched with manure from a previous crop. Sow the seeds thinly at a depth of 1cm (1/2 inch) in drills spaced 30cm (12 inches) apart. Germination is slow, lasting up to 28 days. Once seedlings are large enough, thin them to a spacing of 7cm (3 inches) or 10cm (4 inches) apart if larger roots are desired. Water generously to aid germination, but reduce watering once the plants are established, only keeping the soil moist when necessary. It is crucial to keep the beds free from weeds at all times. Harvest parsnips from October to January as needed, but their sweetness improves if left in the ground as winter approaches. Alternatively, they can be lifted, stored in boxes of slightly moist soil, peat, or sand, and kept in a cool location for up to four months. To avoid damaging the roots, loosen the soil around them using a fork before lifting. As the weather turns cold, the leaves will die off, so placing a short cane by each root will help in locating them for harvest. The pack contains approximately 250 seeds.
